Acids in Food

Here is a list of some of the most predominant acids in popular foods-

Milk, Ice cream, cheese: Lactic Acid

Oranges, lemons, jams, jellies, tomatoes, : Citric Acid

Grapes, Wine: Tartaric Acid

Apples: Malic Acid

Olive Oil: Oleic Acid

How to test the pH of your sushi rice


I have had many several people ask about the pH of sushi rice. So, I was able to get the testing procedure from Hanna Instruments using their HI99161 Food Care portable pH meter.


• Clean electrode with either distilled water or cleaning solution



• Turn unit on



• Hold the on/off key down until CAL blinks on LCD screen



• Calibrate unit using 4.01 and 7.01 buffers



• After calibration rinse off probe with distilled water



• Take a small cup and place sushi rice sample inside cup



• Insert probe directly into the middle of your sushi rice



• Wait until the meter stabilizes and record your result.



• When finished testing always rinse off electrode with distilled water.



• After testing place cap back on probe and make sure either storage solution or 4.01 buffer is in the cap.



 Most sushi rice is in the 4.1 to 4.6 pH range.

IFT Convention


The annual IFT (Institute of Food Technologists) convention will be held this year at McCormick Place in Chicago, IL. From July 17th through the 20th 2010. According to the IFT website:
